ABOUT US

The dining room at Higashiyama Tsukasa
Skewers at Higashiyama Tsukasa

We stand at the foot of Sanjo Shirakawabashi in Higashiyama, Kyoto. Since opening in 2021, chef Tsukasa Miyashita has built every dish on Japanese technique, drawing on what he learned in Chinese and innovative kitchens.

Ingredients and methods from abroad, and a note of ethnic spice, go into combinations that reach beyond washoku while keeping a clear, defined flavour. The omakase runs to twelve dishes, and its cast changes with the season.

The room was designed by the architect Toru Kijima: quiet, warm, finished in wood. There are nine counter seats and nothing else, so the movement of the hands and the scent of each dish reach you close up.
